Our recent staycation in Alabang was very productive. I was able to discover new places and food haunts. One of these is the Union Jack Tavern on the second level of Festival Mall. It’s a spacious and homey British pub that one doesn’t expect to find in a mall. The ambiance is nice, service is friendly and they serve great Indian & British food… definitely a must-visit if you are like me who gets sentimental about Europe! 😉
The place appears to be popular with the foreign community in this part of Manila. That Sunday, it was full of diners who were there for the buffet of beef & turkey roast. I can just imagine how packed this place is even more during the World Cup season.
The restaurant also has an extension area where they sell all sorts of British stuff… from Cadbury to ales and even Marmite 🙂
Anyway, during our lunch in Union Jack Tavern, we tasted a few dishes, including their delicious Full English pizza. I was so obsessed that I sought to duplicate it at home, knowing my kids would love it. Pizza happens to be their favorite food!
The first order of the day was shopping for the ingredients. Union Jack Tavern’s Full English has these two unique items in their pizza: black pudding and hash browns. I gave up on black pudding – an iconic British sausage made of pork blood and oatmeal since it’s expensive and hard to find in Manila.
But the hash browns were another matter since they could be found in every grocery store. Ever since joining the US Potato Safari in Cebu last year, I was acquainted with the merits of US potatoes and how they contain no transfat and little calories. The price is affordable as well (between P130 to P140 for a hefty pack) so now I make sure our grocery loot contains Made in the USA potatoes. My half-American shopping buddy approves!
Here’s my recipe for the Full English Pizza a la Union Jack:
Ingredients:
One pc. store-bought pizza crust
1 cup ready-made pizza sauce
1 pc. hash brown, crumbled
1 cup bacon, diced
1 cup sliced mushrooms
One piece English sausage, sliced diagonally
1 cup mozzarella cheese
1 or 2 pieces small-sized egg (s)
Note: adjust measurements according to the size of your pizza crust and how generously portioned you want your dish to be
Procedure:
1. Preheat oven to 375F.
2. Brush the pizza crust with some olive oil.
2. Slowly spread pizza sauce all over surface of the crust.
3. Add the following: crumbled hash browns, mushrooms, bacon bits, sausages
At this point, here’s how the unbaked pizza looked like:
4. Generously sprinkle mozzarella cheese on top before popping in heated oven for 12-15 minutes.
5. In the meantime, fry an egg in sunny side-up style. Put on top of pizza when it is fully baked.
Here’s how the final version looked like…so cheesy and filling. The hash browns gave the pizza a certain crunchiness and all elements put together made it all so yummy! Am certainly glad to road test another great dish for the kids to enjoy. It is so easy to do as well that any busy mom can make it.
