A lot of us are dieting these days… mind you, not just to look OOTD-ready but mainly for health reasons. A growing number of people seem to be suffering from lifestyle diseases, which means we need to move more and indulge less.
Anyway, I just wanted to share a tried-and-tested kimchi cauliflower fried rice recipe which I discovered early this year when I wanted to be bikini-ready for summer.
The surprising thing is that this cauli rice is so good. The exciting addition of kimchi will make you forget you’re eating a bunch of veggies (which is boring for some people). A cup of this glorious kimchi cauliflower fried rice is expected to tip the scale at just under 50 calories, compared to white or brown rice which is 140 calories or so per cup. Talk about a friendly companion in losing weight.
Adding egg on top adds an Asian touch and gives you enough protein to be ready for those exercises.
Here’s how to make:
– Prepare 2 to 3 heads of cauliflower. Using a stand grater, chop the vegetable into bits until they’re very fine, resembling rice.
– Saute garlic in a heated pan until just turning brown, then add chopped carrots and kimchi. Season with a little soy sauce or salt, pepper and a swig of sesame oil. You can get more creative and add that Korean chili paste called gochujang but the kimchi in itself will already give the rice much-needed flavor.
– Mix the cauliflower rice in the pan until it’s almost dry. Garnish with spring onions, if desired.
– Eat the rice as is or serve it with other food on the table. It would also be a good idea to pack ahead several lunch boxes of these so you can be on the way to weight loss and healthy eating 🙂 Bon appetit!
