I know of some people who would fly to Hong Kong just to satisfy their craving for the famous roasted goose. And some who don’t have an idea how an authentic HK roast tastes like. If you happen to be in either category, worry no more because the real golden goose just like they make it in HK is available for a limited time at Lung Hin in Marco Polo Ortigas Manila.
The treat – available until November 21, 2017 only – is courtesy of the highly-acclaimed guest chef Billy Cheong who has been invited by Marco Polo Ortigas to share his no-fail roasted goose recipe handed down by his family from Guangdong Province. Chef Billy has been awarded Commanderie De Cordens Bleus de France by Chainese des Rotisseurs in 2001 and by the China Hotel Awards in 2013.
The HK-style roasted goose can be ordered by whole, half or quarter. Or it can be savored as part of a set menu.
We tried the latter and it was easily the most delicious Chinese meal I’ve had this year. Each course in the lauriat was excellently prepared, like this Pearl Mushroom Soup with Boiled Shrimp Rolls…
Siomai with a topping of truffle sauce!
The freshest steamed garoupa with shredded pork and steamed mushrooms, ancient-style….
Fried shrimp and vermicelli in XO sauce, which came in a hotpot….
Even the stir-fried Hong Kong seasonal vegetables (asparagus + carrots + garlic) were delightful in their simplicity, having just the right amount of texture and definitely not overcooked.
And just when I thought we already had foodgasm from Roasted Goose & Co. came this big bowl of Fookien Fried Rice with Diced Shrimp and Dried Scallops. It was swimming in its own savory sauce which made it a meal in itself.
Chilled mango pudding to cap it all off.
