Cheese is one of my favorite food items and because it’s a staple in our pantry, all my kids have grown up loving them too. My youngest Lucia can munch on cubed cheese while doing her favorite activity (online games!). I am thankful that she prefers this over nibbling on candies or other junk food.
Cheese is known to be rich in calcium, protein and other essential nutrients. Of late, there’s even some research correlating cheese to anti-cancer and weight loss properties because it is a source of conjugated linoleic acid (CLA). Indeed, some studies have shown that there’s not much difference in the body mass index of people who refrained from eating cheese and those who consumed a lot of it.
As an avid cook, I make sure to include cheese in the dishes I prepare whether ir’s Filipino (like kaldereta) or other international fare. One good thing about cheese is that it is tasty on its own and when mixed with other ingredients, it makes food even more delicious!
This is the case with the recipe am sharing today, the Cheesy Baked Beans Breakfast Quesadillas.

These Cheesy Baked Beans Breakfast Quesadillas are just what you need to have a protein-packed start to your day and very easy to prepare too. This is ideal for brunch or snacking …in fact, any hour you want it!
INGREDIENTS
Soft flour tortillas
Grated melting cheese (I used Graziers Raw Monterey Jack cheese)
One can baked beans
Cooking oil of choice
OPTIONAL
Ham slice
Sunny side up egg
PROCEDURE
Lay out a piece of tortilla on a flat surface, then sprinkle grated cheese on it.
Add the baked beans and top with another tortilla. Press down gently.
Heat oil in a non-stick frying pan and slide down the prepared quesadilla. Lower heat and cook for a minute or two until the cheese has started to melt.
Turn over to the other side and cook for another two to three minutes. Turn off heat. The tortilla sandwich should now be golden.
Slice tortilla into half or in quarters, your preference. Serve hot.
Notes:
– for a fuller, non-vegetarian option, you may add cooked ham
– Topping the tortilla with fried sunny side up egg or siding of fruit is also recommended.
