I’ve said somewhere in this blog that am not crazy about ramen, so I didn’t really line up at every new ramen resto that Manilans obsessed with . Maybe because one of my first major encounters with the Japanese noodle soup didn’t end on an impressive note (sorry Ukkokei Ramen Ron fans). Secondly, am not the kind of person who goes for soups. I prefer my dishes to be dry or with sauce. So I’d rather have adobo rather than bulalo, beef bourguignon rather than bouillabaisse..if you know what I mean 😉
So am a latecomer to Ramen Yushoken which foodies showered with praises a year ago (prior to the opening of Ramen Nagi). It’s really quite a shame since Yushoken is in Alabang and I come from the South. A mystery too that they haven’t opened anywhere else, even after their initial success.
But as the old saying goes: better late than never.Am now glad to be acquainted with Ramen Yushoken. It was love at first Shoyu between this resto and me…
The resto’s Shoyu Tonkotsu Ramen at P350 per serving (pork bone broth + soy-sauce based tare or base sauce) was enough to bring me to heights unforeseen. It made me realize I could love ramen after all. The noodles had a certain chewiness and the house takes pride in making them fresh daily with ingredients imported from Japan. The chashu was tender and the broth was divine…it was bordering between milky and creamy, not sure if part of the soup flavor came from mushrooms but whatever it was, I liked it!
Their gyoza (P150) is definitely one of the best in town I’ve tasted, with the right golden brown crispiness at the bottom.
The Yushoken menu is pared down to the basics and I was thinking of a chahan with the gyoza. However, rice plus ramen is rather exaggerating it 🙂
As expected, the Tantan-men had a fiery kick coming from the chili oil. Noodles + ground pork made this dish very filling. But until I taste the other noodle varieties, my loyalty reverts to the shoyu ramen.
Off the menu: regular customers recommend the shoyu maze soba, dry noodles with egg yolk and pork back fat. Gives me reason to come back
