With international, Michelin-starred chefs in attendance, Madrid Fusion Manila 2015 is the biggest gastronomic event to happen in the country this year. And guess what? It’s happening in six days…April 24-26, 2015 to be exact!
Since the much-awaited event will be held at the SMX Convention Center in Pasay City, SM Supermalls presented to the media a few of the top Filipino chefs who will carry the banner for Filipino cuisine in Madrid Fusion Manila. They demonstrated a sampling of the creative, innovative dishes which they intend to showcase to the world in the three-day gastronomy congress-cum-food festival.
First to take the stand was Chef Bruce Ricketts, the twentysomething culinary genius behind Mecha Uma in BGC. He made this delectable Seared Prawns with Marinated Saba, Avocado and Burnt Coconut Vinegar.
Up next was Rob Pengson, the chef patron behind such topnotch establishments as The Goose Station, Olive Tree Kitchen & Bar, Shine Bakery, among others.
His creation is this Mango Tapioca Surprise which is made up of silken tofu, diced mango, sago, fried spring roll wrapper & other yummy bits.
Noted chef, restaurateur & book author Claude Tayag, who will talk about the Philippine Adobo in the Madrid Fusion gastronomy congress, made two versions of the national dish: the Adobo ni Juan Tamad and Adobong Puti.
The Madrid Fusion preview was held at the Sarsa Kitchen so Sarsa’s chef JP Anglo also concocted his own interpretation of an iconic Pinoy dish with a twist.
It was in the form of this Bangus Spring Rolls with Talangka Vinegar and Batikulon Mang Tomas Sauce.
Aside from Tayag, Pengson and Ricketts, Team Philippines will be represented by other top chefs like Fernando Aracama, Margarita Forés, J Gamboa, José Luis “Chele” Gonzalez, Pepe Lopez, Myrna Segismundo and Juan Carlos de Terry.
Together, they will share notes and pit talents with some of the world’s best. Among them are the legendary Andoni
Luis Aduriz, Elena Arzak, Quique Dacosta, Ramón Freixa, Francis Paniego, Paco Roncero, Mario Sandoval, Paco Torreblanca, André Chiang, and Alvin Leung.
