It’s barely three weeks before Christmas and some of us are already planning which festive, delectable food will grace our tables. Learn from the expert as Maya Kitchen’s Elite Culinary Series presents chef Sau Del Rosario in a Noche Buena special tomorrow, December 5, from 9am to 1pm.
Chef Sau – who is presently the culinary director for the Center for Culinary Arts Manila – will teach guests and students how to prepare the following holiday dishes:
Tamales, a type of Filipino rice cake made from rice flour simmered with coconut, annatto and shrimp stock then topped with peanuts, chicken and quail eggs;
Chicken Galantina, traditional stuffed chicken made of ground meat,chorizo, Vienna sausage, capers, raisins, eggs, ham and bacon;
Salt-Baked Salmon, salmon covered then cooked with egg whites and salt served with orange and rosemary beurre blanc sauce;
and finally –
Brazo de Mais, dessert infused with corn and molded to look like a real corn. It is stuffed with pastry cream and layered with egg whites.
The French-educated Chef Sau needs no introduction in the local food circle. Among the restaurants he opened are Chelsea, M Café and Le Bistro Vert, to name a few. He’s a recipient of Most Outstanding Kapampangan Awards for Culture (MOKA) and a few months ago and is author of the cookbook, 20 Years of Love + Cooking.
He will soon open two restaurants, ‘Lola’s Boy’ in Angeles City and ‘93 North’ along H.V. dela Costa Street, Salcedo Village, Makati which is set to open in February 2016.
