Foreigners often ask why there’s plenty of fried food in the Filipino diet. I don’t know how to answer this question because it will just entail admitting guilt. Even if we fry food to death, I think the key is to just use healthy oil.
Through a media launch recently, we were glad to be introduced to Grande Rice Bran Oil which is labelled as the “olive oil of the East.” It’s deemed healthy enough that it can be used as an ingredient for making salads and also as a base for baking.
This type of oil is 100% physically refined and extracted, thus retaining its natural nutrients. It’s rich in Vitamin E, phytosterols and gamma-oryzanol. Aside from being recommended to improve cardiovascular health, rice bran oil is also helpful for people suffering from diabetes, high blood pressure and obesity.
One liter of Grande Rice Bran Oil costs P185 per liter in major supermarkets. It’s really not much to pay in exchange for good nutrition, a fact attested by the Philippines’ foremost pastry chef Miko Aspiras.
Chef Miko loves rice bran oil because it can be used for anything, even in desserts. He’s shown in the cooking demo making the dressing for Sesame Tuna Aburi Tataki Salad with top blogger Chuvaness.
Here’s the finished product. The mayo-based dressing using egg yolk and Grande rice bran oil as one of the ingredients was a good complement to the fresh fish.
Next, Chef Miko whipped up a gourmet version of “Pork And Beans” which had deep-fried pork belly roll, then white beans, chorizo and marbled potatoes on the side.
The dessert was the bomb.Brioche donut ball paired with ice cream. But what really made it delicious was the pili butter glaze – a delicious mix consisting of pili nuts, salt, sugar and rice bran oil transformed into a delicious sauce. Perfect meal-ender.
At the demo venue in The Cookery Place, I sat next to a blogger named Pancake (!!) and Michelle. It was another informative session for us learning new dishes.
