Happy New Year everyone!
The holidays came by in a whirl. It was all about shopping, attending parties, gift-giving, tinkering in the kitchen and of course, precious family bonding time!
Anyway, one of the nicest gifts I received over Christmas was this large native bag filled with kitchen goodies from Knorr. About half of the contents were already stashed away by the time I took this photo. It was just very timely because I was wishing for a new non-stick pan and utensils. Of course, Knorr ready-made mixes like the ones used for sinigang, adobo, and menudo really are handy especially when it is just the trusty maid cooking for the household on busy weekdays. I have no issue with using flavored seasonings because they are are ultra-convenient and adds a kick to everyday dishes.
Here’s a precious cooking tip I’d like to share to busy moms out there. Intensify the flavor of your baked chicken by rubbing it all over with sinigang mix prior to putting in the oven. The packet also comes in handy when you don’t have lemon or herbs needed in the recipe. Over the holidays, I made our family recipe of baked chicken with garlic. It called for fresh thyme but I couldn’t seem to find any that day, so I made up for it by infusing the dish with Knorr sinigang mix.
After baking, the skin looked a little burnt but it was yum yum all the way! 🙂
Here’s the Baked Chicken Sinigang recipe originally published in “Plan,Cook,Eat” Menu Planner from Yummy.
Ingredients:
1 whole chicken, cut into 8 pieces
Knorr Sinigang sa Sampalok Mix Original, as needed
ground black pepper
1/4 cup Knorr Liquid Seasoning
3 medium-sized potatoes, cut into wedges
3 tomatoes, quartered and seasoned (note: I added garlic instead)
1 stalk lemongrass, pounded
1 lemon, sliced into wedges
2 tbsps. chopped fresh oregano
Olive oil for drizzling
Procedure:
1. Rub and season the chicken pieces with pepper, Knorr Sinigang Mix and Liquid Seasoning. Refrigerate overnight or at least an hour.
2. In a baking dish, arrange the chicken with the potatoes, tomatoes, and lemon grass. Drizzle with olive oil, and squeeze a bit of lemon juice. Add oregano, if desired.
3. Bake in a preheated 350F oven for 30 to 40 minutes or until chicken is cooked through.
